Orange Date-Nut Coffee Cake
There’s something about starting your day and spending the morning baking. The smells that fills the air and the warmth of the oven bring about a cozy activity. This recipe has always been pulled out from the binder and cooked up for the whole family to devour. Enjoy it with your morning cup of coffee or enjoy it as an after dinner treat. Or both, we don’t judge!!
Recipe:
-2 cups freshly milled flour (hard or soft white) - ½ cup oil
-1 tbs. baking poweder - ¼ cup honey
-½ tbs. salt -½ cup snipped date
-1 egg -½ cup orange juice
-½ cup milk - 2 tsp. orange peel
Toppings:
-½ cup Sucanat -½ cup chopped walnuts
-1 tsp. cinnamon -2 tbs. butter
-Dash of nutmeg
Stir together flour, baking powder and salt. Make a well in the center. Add egg, milk, oil, and honey. Stir just until well mixed. Add dates, orange peel and juice. Stir into batter just till blended. Spread evenly in a greased 9”x9” pan. Combine walnuts, Sucant, butter and cinnamon; sprinkle over batter. Bake at 350’ for 35-40 minutes or until done in center. Sheild with foil if getting too brown. I double this recipe for our family and use a 9”x 13” pan.
